Let’s make some chicken!
When I first saw the following recipe, my mouth immediately began to water (Pavlov’s dog, anyone?) and I wanted to eat my computer screen. This is RARE when it comes to chicken… I mean, don’t get me wrong, I love the stuff… but I’m also ohsotiredofit. New recipes to the rescue! You can thank me later .
Thai Chicken Quinoa
recipe from How Sweet Eats
1/2 cup uncooked quinoa, rinsed
1 boneless, skinless chicken breast, cooked and shredded
1/4 cup chopped carrots
1/3 cup shelled edamame
1/4 cup chopped unsalted peanuts
2 tablespoons sweet chili sauce
1 tablespoon rice vinegar
1 tablespoon canned coconut milk (light)
1/2 tablespoon brown sugar
1 teaspoon melted peanut butter
1 garlic clove
1/2 lime, juice
1/8 teaspoon ground ginger
Prepare quinoa according to directions. While cooking combine sauce ingredients in a bowl and whisk until combined. Once quinoa has absorbed all of the liquid, stir in sauce and toss to coat. Add in chicken, carrots, edamame and half the peanuts, stirring to combine. Serve in a large bowl, topped with remaining peanuts.
